I’ve been preparing this meal for my family and friends for what seems like forever. But it’s (to me) the greatest combination of flavors: garlic, soy, ginger and brown sugar. It’s a snap to prepare, and it’s perfect for a tailgate or other party you’re hosting!
And a nice accompaniment is rice or cauliflower rice or an Asian slaw.
GRILLED CHICKEN SATAY
with Peanut Sauce
STEAMED ASPARAGUS
GRILLED CHICKEN WITH PEANUT SAUCE
1 cup teriyaki sauce
4 garlic cloves minced
3 TBSP lime juice
2 1/2 TBSP minced fresh ginger
2 TBSP brown sugar
3 lbs boneless, skinless chicken breasts, sliced into 1/2″ strips
Metal skewers
PEANUT SAUCE
1 cup creamy peanut butter
1 1/2 cups chicken broth
1/4 cup lime juice
3 TBSP brown sugar
2 TBSP soy sauce
2 TBSP minced fresh ginger
1/2 tsp cayenne pepper
In a bowl, combine the teriyaki sauce, garlic, lime juice, ginger and brown sugar. Stir until sugar dissolves. Add chicken, and stir to coat. Cover and refrigerate at least 1 hour.
Combine all peanut sauce ingredients and heat. Stir until smooth.
Thread the chicken on skewers once marinated.
Then grill until done ~ 5 minutes per side.
Steam some asparagus roughly 8 minutes.
