EASY OVEN ROASTED POTATOES (Adapted from Plain Chicken)

I’ll make these the day before, and simply reheat either on the grill
or the microwave before serving.
They’re fine at room temperature as well.
2 large potatoes, scrubbed
3 Tbsp olive oil
1 Tbsp Italian Seasoning
1 tsp salt
4 Tbsp Parmesan cheese

Dipping Sauce:
1/2 cup sour cream
1 tsp fresh chives
Lemon Pepper to taste
Tabasco, to taste

Slice potatoes into very thin slices (1/4 inch).

Toss potatoes with olive oil, Italian seasoning and salt in a ziplock
bag to coat.

Place in a single layer on a baking sheet lined with foil.

Bake at 450 degrees for 20-30 minutes, until lightly brown.

Top with Parmesan cheese and bake an
additional 5 -7 minutes.
