Crock Pot Breakfast Casserole


1 lb hot pork sausage
12 eggs
1 cup milk
salt and pepper, to taste
1 pkg (2 lbs) potatoes o’brien (hash browns with diced onions and peppers)
1 tomato diced
2 cups cheddar cheese shredded


  1. Brown sausage in skillet until cooked through and crumbled.  Set aside.
  2. In a large bowl, beat eggs together with milk. Add salt and pepper.
  3. Stir in sausage, potatoes, tomato, and cheese.
  4. Spray crock pot with cooking spray, and pour in egg mixture.
  5. Cook on low heat for 6-8 hours.
  6. Top with sour cream, salsa, scallions…
